- As a way for years, I'd used cooking purses for turkeys and big knocks in my cheap, $ 10 roasting pan. Then I took a cooking class and took how to make gravy from the drips. Headache is, you can't do that with a $ 10 pan. So I bit the bullet, did my homework, shopped for a great deal and purchased Calphalon contemporary stainless for about $ 100. And we LOVE it! Rack is non-stick and is a breeze to clean. Pan is NOT non-stick, but deglazing it regarding wine when I produce the pan gravy takes off all the major stuff and the rest arrives clean with dish soap and a leech. (I did n't want a non-stick pan, as I consider this thing to last for all time, and Calphalon contemporary nonstick surfaces wear out.) The only just catch with this pan is it's big, so it holds and cooks a awesome turkey perfectly, but my mire poix does burn around the edges when cooking a chicken or a little roast. I ended up purchasing a second, little roasting pan like the majority of this, but the little one is n't near as nice as this Calphalon contemporary and it cost even as a heavy. I wish Calphalon made a 9x13 size.

It has shocked me by getting MUCH BETTER roast chicken than I have made using a cooling rack set aside over a jelly roll pan. I can hardly wait and see to try a turkey in this pan! It's solid but not heavy, easy to deal and easy to clean. I could not be more proud of. Worth every single penny! I am critically pleased with this roasting pan.

The meat was moist and fantastic throughout. Stuffed 20 lb turkey cooked evenly in 5 1 2 hrs. Lots of fantastic rich brown juice and drippings. Most suitable gravy I HAVE EVER HAD. I can not describe how amazing those turkey drippings were! Pan did outstanding on the range too when creating the gravy itself. Worthy of every penny for the pan. Plan to use for same for Christmas dinner and I will surely try roast lamb and various other roasts too now. Pan was heavier than I anticipated, but great quality. Hint : stab the best of the turkey in different areas to bring out more juices during the final few hours of cooking for more juice with the drips.
